Stir-Fried Cauliflower with Mushrooms and Chestnuts

Stir Frying,the most popular technique,calls for the vegetables to be tossed quickly first in a small amount of peanut oil,then to finsh cooking with the water which is already there in vegetables or in liquid which is added later.

Ingredients

1)Black Mushrooms (Dried)-6
2)Cauliflower-1(small)
3)Sliced Water Chesnuts-5
4)Cornflour/starch-1 tsp
5)Stock-1/4 cup
6)Soya sauce-2
7)Sherry-1 tsp
8)Water-2 tsp
9)Peanut oil-5 tsp
10)Mushroom soaking liquid-1/2 cup.

How to Prepare

1)Soak dried mushrooms,reserve the soaking liquid.
2)Cut cauliflower into florets,cut the stem in 1/2 inch slices.
3)Par boil water chesnuts and soaked mushrooms.
4)In another bowl,mix stock,soy sauce,sherry and mushroom liquid.
5)Heat oil in a pan,when hot add mushrooms and fry it,
  add water chesnuts and mix it well with the the oil.
6)Add the stock-soy mixture and saute it well.
7)Add cauliflower and bring to boil,cook it for some time on medium heat.
8)Mix corn/flour starch and cold water and Pour that paste to the
  vegetables.
9)Cook it until the vegetables are tender.

Fried Cauliflower with mushrooms and water chesnuts is ready to be served.
