Soya Kofta Curry
Soya Kofta is a very delicious north indian dish, particularly in Mumbai.
Ingredients
For the Kofta
1)Soya granules-1/2 cup (4 oz)
2)Chana Dal-1/4 cup (2 oz)
3)Coriander Powder-1 tsp
4)Garam Masala Powder-1/4 tsp
5)Cumin Powder-1/2 tsp
6)Turmeric powder-1/4 tsp
7)Peppercorns-10
8)Green chilies-4
9)Garlic cloves-3
10)Cilantro leaves-1/4 cup
11)Mint leaves
12)Lime Juice-6 tsp
13)Salt-1 tsp
14)Oil for frying
For the gravy
1)Finely chopped onion-2 no
2)Chopped ginger-2 tsp
3)Chopped cilantro leaves-2 tsp
4)Garlic cloves-2 no
5)Salt-1 tsp
6)Cayenne pepper-1 tsp
7)Coriander Powder-1 tsp
8)Turmeric powder-1/4 tsp
9)Cinnamon stick-1
10)Pureed tomatoes-2
11)Garam masala powder-1/4 tsp
How to Prepare the kofta
1)Soak the soya and chana dal overnight.
2)In a pan add 1 1/2 cup water and add soya and chana dal and bring to a boil, cook until the grams are tender, and there should not be any water left. Add lime juice to this.
3)Grind the soya,gram mixture,coriander,cumin,turmeric,peppercorns,chilies,garam masala,garlic,chilies,cilantro and mint leaves,add salt to taste.
4)Shape the mixture into lime sized balls.
5)Heat oil in a heavy bottomed pan,when the oil is hot enough drop the lime sized balls into the oil and fry until golden brown.
6)Remove it from oil and drain on a paper towel.
How to Prepare the soya kofta curry
1)Heat oil in a pan,and when it is hot add onion to it and fry until golden brown,add ginger,garlic,cinnamon,turmeric powder,coriander and saute them for 2 minutes.
2)Add garam masala,cayenne and stir it well, add tomatoes and reduce the heat and fry it for 3-4 minutes.
3)Add water and salt as required bring to a boil, put the kofta into the gravy and allow it to cook for another 4 minutes.
Soya kofta is ready to be served.
