Roasted Pineapple
Ingredients
1)Large Pineapple-1
2)Vanilla sugar-1/2 cup
3)Vanilla beans-5
How to prepare
1)Fill 6-quart heavy bottomed pan with water and bring to a boil.
2)At the same time,peel the pineapple,keep the pineapple upright and place the knife at the top of the pineapple,cut along the natural curve of the pineapple from top to bottom, slicing off the skin, repeat this process,moving around the pineapple, until the skin is removed.
3)Roll the peeled pineapple in the vanilla sugar until it is well coated
4)Using a wooden spoon make ten holes horizontally through the pineapple ,make
sure that you are evenly spaced from top to bottom.
5)Slice the vanilla beans in half lengthwise.Insert one vanilla bean half into each hole
in the pineapple.
6)Wrap the pineapple in 6 layers of plastic wrap,make sure that water cannot
penetrate the plastic wrap.
7)Place the wrapped pineapple in boiling water,reduce the heat to low,and allow
the pineapple to simmer until it becomes slightly translucent and the colour has
darkened, about one hour.
8)Pre-heat the oven to 350 degree F
9)When the pineapple is ready,remove it from the pan and remove the plastic wrap.
10)Place the pineapple in the saucepan and bake for 40 minutes or until soft and
slight brown.Baste it with its own juices every 5 to 10 minutes.This will help keep the
pineapple moist.
11)Remove it from oven,place the pineapple on a platter.If you want to make it more
attractive, we can reattach the top with wooden skewers.
Roasted Pineapple is ready to be served.
