Rajma-Spicy Red Beans
Rajma is a very famous North Indian cuisine. Red beans are cooked in a flavourful manner.
It can be served as a side dish with rice.
Ingredients
1)Red Beans- 2 cups
2)Cayenne -1/2 tsp
3)Minced ginger-1 tsp
4)Minced garlic-1 tsp
5)Fennel seeds-1 tsp
6)Ground cinnamon-1 tsp
7)Ground cloves-a pinch
8)Ground cardamom-1 tsp
9)Ground turmeric -1 tsp
10)Chopped tomatoes-2 cup
11)Garam Masala-1 tsp
12)Salt to taste
13)Bay leaf-1
14)Oil-8 tsp
How to prepare
1)Soak the red beans overnight ,drain the water.
2)Place the drained beans in a large pot with water to cover it add cayenne and salt and cook until they are just about tender.
3)Heat oil in a pan,when it is hot add ginger,garlic,fennel,cinnamon,cloves,cardamom,turmeric
and bayleafs,saute it for a minute add tomatoes and saute it well.
4)Drain the beans,reserving a little of the bean-cooking liquid .
5)Add beans to the to the (step 3) tomatoes and spices and continue to cook until the beans are tender.Add water and salt if necessary. Instead of water you can add reserved liquid.
6)When the beans are done add garam masala.
Rajma is ready to be served.
