Pineapple Fried Rice
This dish is very attractive when the pineapple is used as serving container.
Ingredients
1)Pineapple-3/4 cup
2)Soy sauce-2 tsp
3)Oil-5 tsp
4)Coriander leaves
5)Garlic cloves-3
6)Salt as required
7)Grated carrot-5 tsp
8)Frozen peas-1/4 cup
9)Chopped onion-5 tsp
10)Cooked long grain-3 cup
11)Roasted Raisins and cashews
12)Dried Chinese black mushroom-4
13)Finely Chopped Red chili peppers-2
How to Prepare
1)Soak the mushroom in hot water for half an hour.
2)Heat oil in a pan,and when it is hot add onion to it and saute it
until translucent,add chinese black mushroom,carrot,garlic cloves,
and peas and saute well and keep it aside.
3)Heat oil in another pan,add the rice,stir it continuously without
browning,add sauted onion,mushroom,soy sauce to it and mix it well.
4)Add pineapple,stir until thoroughly combined.
5)Remove it from flame,place cooked fried rice in a large pineapple
which has been hollowed out.
6)Garnish it with raisins,cashews,red chillies and coriander leaves.
Pineapple fried rice is ready to be served.
