Pavakka Pachadi

Pachadi refers to traditional South Indian side-dish. In Kerala and Tamilnadu states pachadi is typically made of a finely chopped and boiled vegetable added with essentially coconut, green or red chillies, dressed over with sauted ginger, curry leaves and mustard seeds in oil.

Ingredients

Pavakka(Bitter Gourd/melon)-1 nos
Green Chilli-3
Tamarind water-4 tsp
Asafoetida-a pinch
salt as required
Mustard seeds-1/4 tsp
oil-2 tsp
Curry leaves
gingelly oil-1 tsp
Jaggery-2 tsp

To grind
Grated Coconut -1/2 cup
Green chilli-1
Mustard seeds-1 tsp
 

How to Prepare

1)Grind coconut,green chilli and mustard seeds and keep it aside.
2)Heat oil in a pan,add mustard seeds to it when it starts popping
  remove it from fire and keep it aside.
3)Remove the seeds from Bitter gourd and cut it into thin pieces
  of 2 inch.
4)Heat gingelly oil in a pan,and chopped bitter gourd,green chilli
  and saute it well,add more oil if required,it should become  golden brown in colour.
5)Add tamarind water to this,add salt,asafoetida,jaggery,turmeric
  powder and boil it well,it should become a semi gravy,add coconut
  paste to the gravy and when it starts boiling add mustard seeds to
  it.

 Pavakka pachadi is ready to be served.
