Omelette curry

This dish is very popular in Malabar Coast. Best eaten with sliced bread.

For the Omelette

Ingredients

Egg -3
Finely Chopped Onion-1
Finely chopped Green chiles-2
Finely chopped Cilantro leaves-1 tsp
Black pepper-a pinch
Salt and oil as required

For the Gravy

Cumin seeds-1/2 tsp
Fennel seeds-1/2 tsp
Coriander powder-2 tsp
Cayenne pepper-1/2 tsp
Turmeric powder-1/4 tsp
Garam masala-1/2 tsp
Grated coconut-2 tsp
Oil-4 tsp
Finely sliced onion-1
Finely chopped Green chiles-2
Finely chopped tomato-1
Cider vinegar
Chopped cilantro leaves-1 tsp

How to Prepare

1) Put the coconut,cumin and fennel seeds,coriander,cayenne,turmeric and garam masala into a mixer with 2 tsp water to grind it to a fine paste and set aside.
2)To make the omelette ,whisk the eggs,add onion,green chiles,cilantro leaves,pepper and salt to taste and mix it well.
3)Heat oil in a pan,when it is hot,pour the above mixture (step 2) to it and  when the lower side of the omelette is cooked,turn the omelette over,when it is cooked remove it from fire
4)First cut omelette into half,then crossways into strips.Roll up the strips and keep it aside
5) To make the curry heat oil in a pan,when it is hot, add sliced onion and saute it well,add the ground paste (step-1) and saute it for some time.Add a little oil if required.
6)Add green chiles and tomato and saute it well,then add vinegar,3 cups water and salt to taste and simmer for 10 minutes.
7)Add omelette strips and cilantro leaves,reduce the heat to low,cook for 2-3 minutes,remove it from flame.

Omelette curry is ready to be served.
