Lamb with Apricots

This is quite a simple dish to prepare and has a tinge of sweet and sour.

Ingredients

Dried Apricots-4 oz
Oil-1/4 cup
Finely chopped onion-2 no
Finely chopped garlic cloves-2
Cinnamon stick-3 inch
Green Cardamom-5
Cayenne pepper-1 1/2 tsp
Cumin Powder-1/2 tsp
Chopped Tomatoes-2 no
Stewing lamb-1 1/2  lb
Garam Masala-1/2 tsp
Black pepper-1/4 tsp
Wine vinegar-1 tsp
Sugar-1 tsp

How to Prepare

1)Soak apricots in 1/2 cup water with 2 drops of vinegar,keep it aside for 1-2 hours.
2)Heat oil in a heavy bottomed pan,and when it is hot fry onion until golden brown,add
    ginger and garlic,cinnamon and cardamom,saute it for a minute.
3)Add cayenne and cumin powder and stir it well.
4)Add tomatoes and saute it,add meat,garam masala and pepper powder and fry it
   for 5 minutes,add salt as required and reduce the heat and cook it until the meat is tender.
5)If all liquid evaporates,add some water.
6)When the meat is done,add vinegar,sugar and the drained apricots and cook for 8-10
     minutes.
7)Remove it from fire.
