Kerala Vegetable Stew-South Indian

Vegetable Stew is a delicious dish that can be served along with Chappathi,Bread,Roti or Naan.

Ingredients

1)3-4 cup(s)of chopped vegetables(Beetroot,carrot,beans,potato,cauliflower,onion and green peas)
2)Green Chili-2 nos
3)Coconut Milk-1/2 cup
4)Cinnamon-a small piece
5)Cloves-1 nos
6)Cardomom-2 nos
7)Black Pepper powder-1 pinch
8)Bay leaves-2 Nos
9)Curry leaves
9)Garam Masala-1 tsp

How to prepare

1)Cook all the vegetables with salt (in a pressure cooker) including grean peas.
2)Heat ghee in a pan,add cardamoms,cloves,cinnamon,bay leaves and curry leaves.
3)Add green chili,sliced onions and ginger.Saute it till the onion becomes transparent.
4)Mix it with the vegetables and add water as required,boil it for some time.
5)Add garam masala or any masala flovours for added taste.
6)Add cocunut milk,pepper powder and vegetable oil,cook it for 2 min.
7)Garnish it with curry leaves.

Stew is ready to be served.
