Hyderabadi pilaf
Hyderabadi pilaf can be served with any meat dish and with some vegetable dish such as carrots with dill.
Ingredients
1)Chana dal-1/2 cup
2)Basmati rice-2 cup
3)Vegetable oil-8 tsp
4)Onion-1
5)Ground Turmeric-1/4 tsp
6)Grated Ginger-2 tsp
7)Chopped Garlic-2 tsp
8)Yogurt-4 tsp
9)Red chili Powder-1/4 tsp
10)Ghee-2 tsp
11)Milk-2 tsp
12)Lemon juice-2 tsp
13)Garam Masala-1/4 tsp
14)Finely chopped green chilies-2
15)Finely chopped mint leaves-1 tsp
16)Finely chopped coriander leaves-1 tsp
How to Prepare
1)Wash and Soak the chana dal for 2-3 hours,wash and soak the basmati
rice for half an hour.
2)Transfer the dal and its soaking liquid into a pan add turmeric and
bring to a boil,cover it,reduce the heat and simmer for 25 minutes or
until they are tender.
3)Heat oil in a pan,when it is hot add onion and saute it till it is
dark brown in colour.
4)Transfer the onion to a plate lined with paper towels.
5)Add ginger and garlic to the same oil,saute it till they are lightly
browned.Add 2 tsp of yogurt and a pinch of turmeric powder and saute
it until no water is left and the remaining particles brown lightly.
6)Add drained dal to the above and add 1/2 tsp salt and chili powder
and mix it well.Saute the dal for 1-2 minutes.
7)Heat the oven to 325 degree F bring 12 cups of water to a rolling
boil add 1 tsp of salt and stir well.Now add the drained rice to this
and bring this to a boil.Boil for 5 minutes or until the rice is about
three quarters cooked.
8)Drain the rice and and transfer half into a wide,oven proof pan.
Cover the rice with the cooked dal.cover the dal with the remaining
rice.
9)Spread the ghee and onions over the rice,sprinkle the lemon juice,
milk,coriander,mint,green chillies and garam masala over the top.
10)Cover tightly first with a foil and then with a lid and place it
in the oven for 30 minutes.
Hyderabadi pilaf is ready to be served.
