Goa Pork Vindaloo

Vindaloo is primarily made with chilies,garam masala,garlic and vinegar.Vindaloo in Goa is traditionally made with pork.

Ingredients

Red chiles-6
Cayenne Pepper-3 tsp
Cumin seeds-1 tsp
Cloves-6 no
Cinnamon stick-2 inch
Peppercorns-10
Star anise-1
Poppy seeds-1 tsp
Peeled Ginger-1 piece
Garlic cloves-6
Tamarind pulp-1 tsp
Cider vinegar-4 tsp
Oil-1/3 cup
Finely chopped Onion-2 no
Stewing pork-1 1/2 lb cut into cubes and salted
Jaggery-1/2 tsp
Curry leaves

How to Prepare

1)Soak the chiles in a little water to soften.
2)Grind all spices,ginger,garlic,and tamarind with the vinegar to make a smooth paste.
3)Rub a little of the spice mixture on to the pork and marinate it for 1 hour.
4)Heat the oil in a cooking pot and fry the onions until they are brown.Add the spice
    paste and fry for 5 minutes,stir it continuously and adding 2 tsp water if needed.
5)Add the pork and saute in the spice mixture for 4-5 minutes and add 4 cups of water
    and salt to taste and cook over a low heat until tender,Add the curry leaves and simmer
    for 3-5 minutes.
6)Remove it from fire

Goa pork vindaloo is ready to serve.
