Eggplant Salad

Eggplant salad can be served as a side dish or appetizer.This delicious eggplant recipe is simple to make.

Ingredients

1)Eggplant-1
2)Vinegar-2 tsp
3)Peanut Oil-1 tsp
4)Garlic clove-1
5)Salt-1/2 tsp
6)Pepper Powder-a pinch

How to Prepare

1)Cut the egg plant lengthwise into two pieces.Place it in a
  shallow heat proof dish and steam for about 25 minutes or until soft.
2)Allow it to cool,remove the stem end and peel,tear lengthwise in
  strips,chop it.
3)Transfer egg plant to a bowl add vinegar,peanut oil,salt and
  pepper, mix it well.
4)Cut the garlic clove to two pieces,add that to the above mixture
  (step 3)
5)Refrigerate the eggplant mixture overnight.
6)Arrange the lettuce leaves on a serving platter,pour the eggplant
  mixture onto lettuce.
7)Remove garlic from the above.

Egg plant salad is ready to be served.
