Chinese Egg Fried Rice
Ingredients
1)Rice-2 cup
2)Salt to taste
3)Peanut oil-6 tsp
4)Eggs-3 no
5)Minced garlic-1 tsp
6)Minced ginger-1 tsp
7)Coriander powder-1 tsp
8)Crushed peppercorns-1/4 tsp
9)Chili Sauce-1 tsp
10)Finely chopped cilantro-1/4 cup
11)Soy sauce-1/4 cup
12)Black Pepper Powder-1 tsp
13)Salt to taste
14)Ajinomoto -a pinch
15)Mixed vegetables-2 cup
(Finely diced carrots, green beans,
Celery, zucchini, sliced mushrooms,
Broccoli and cauliflower cut into
florets)
How to Prepare
1)Wash and soak rice for 30 minutes..
2)Boil rice with salt for 10 minutes(or till it is half cooked)
drain water from the rice.
3)Heat oil in a pan,when it is hot add ginger and garlic and saute it
for a while add pepper corns,coriander and add vegetables to it
and saute it till the vegetables are tender.keep it aside.
4)Heat oil in a heavy bottomed pan,when it is hot add rice and stir fry
over high heat,stir it continuously for some time.
5)Add egg to this,one at a time and mix well.
6)Add soy sauce and chilli sauce,mix it well till the rice is browned.
7)Add ajinomoto,pepper and fried vegetables,reduce the heat to low,mix and fry for 10 minutes
8)Remove it from fire and garnish it with cilantro leaves.
Chinese Egg fried rice is ready to be served.
