Chettinad Chicken
Chettinad Chicken is a very popular dish in Tamil Nadu (South India) .Chettinad is a region of the Sivaganga district of southern Tamil Nadu state.
Ingredients
1)Chicken breast-4 kg
2)Cinnamon-1
3)Salt as required
4)Turmeric-1/4 tsp
5)Vegetable oil-10 tsp
6)Mustard seeds-1 tsp
7)Fennel seeds-1/2 tsp
8)Red chillies-4
9)Urad dal-1/2 tsp
10)Chopped Red onion-1
11)Tomato-1 nos
12)Coriander seeds-1tsp
13)Cumin seeds-1 tsp
14)Cardamom pods-2
15)Lime Juice-1 tsp
How to Prepare
1)Cut the chicken breast into two pieces,again cut each half into
8 pieces.
2)Mix salt and turmeric powder and oil and apply this paste on the
chicken pieces and marinate it for an hour.
3)Heat oil in a pan add coriander seeds,fennel seeds,cumin seeds
dry red chillies,cinnamon,cardamom,roast it and allow it to cool
grind it to a fine paste.
4)Heat oil in a heavy bottomed pan,add mustard seeds to it and
when it starts popping add dal to it.
5)When the dal turns red add onion to it and saute it till it
becomes brown in colour.Add chopped tomato to it saute it well.
6)Add ground paste and chicken pieces to this and fry it well.
7)Add salt and sprinkle water in between.(if needed)
8)Cook it on medium flame,keep stirring,and cook it till the chicken
is tender.
9)When it is done add lime juice to it and mix it well.
10)Remove it from flame and garnish it with coriander leaves.
Chettinad chicken is ready to be served.
