Aviyal-Mixed Vegetable Curry

Aviyal is a dish that has a unique place in a typical Kerala Cuisine.It is a thick mixture of vegetables and coconut.It is seasoned with coconut oil and curry leaves.

Ingredients

1)Grated Coconut-1 cup
2)Drumsticks-3 nos
3)Raw Plantain (Banana)- 1 nos 
4)Raw Mango-1 piece
5)Yam(Chena)-1 piece
6)Green Beans-120 gm
7)Cucumber(vellarikka)-1/4
8)Ash gourd(kumbalanga)1/4
9)snake gourd(padavalanga)1/4
10)Curry leaves
11)Green chillies-2
12)Turmeric Powder
13)Cumin Seeds(Jeerakam)-1 tsp
14)Coconut Oil/Vegetable Oil-3 tsp

How to Prepare

1)Cut the vegetables lengthwise into thin two inch pieces.
2)Cook the vegetables with salt and turmeric powder.
3)Grind the grated coconut with cumin seeds.
4)Add ground paste to the vegetables and salt,cook it for 5 Min.
5)Turn off the gas,add coconut oil and curry leaves to it.

Aviyal is ready to be served.
