Mixed Vegetable Curry
Ingredients
1)Onion-2 no
2)Grated coconut-1 cup
3)Oil-5 tsp
4)Dried Red chili-3
5)Coriander Seeds-2 tsp
6)Cumin seeds-1/3 tsp
7)Asafoetida-1/4 tsp
8)Turmeric Powder-1/4 tsp
9)Bay leaf-1
10)Blade of mace-1
11)Mustard Seeds-1/2 tsp
12)Lime Juice-1 tsp
13)Cloves-4
14)Peppercorns-8
15)Cinnamon stick-2 inch
16)Yam,Carrot,potato,beans,peas,sweet potato
How to Prepare
1)Finely chop one onion and slice the other.
2)Heat oil in a pan,when it is hot add grated coconut and saute for 5 minutes and remove
it from fire,transfer it to a bowl and keep it aside.
3)Put the red chiles and coriander seeds to the same pan,add cloves,peppercorns and
cinnamon and saute it for 3-4 minutes.Transfer this to the coconut bowl.
4)In a mixer,puree the roasted spices and sliced onion,add half cup water.
5)Heat oil in a pan,and when it is hot add mustard seeds,cumin,asafoetida and turmeric
powder.Add bayleaf,chopped onion and fry until onion is browned.Add the spice mixture
and mace and fry for another 8-10 minutes,add 3 cups of water,add salt to taste and
mix well.
6)Add vegetables in order of their cooking time,add yam ,followed by carrot and after
that potatoes,add beans after that.Finally add peas.
7)Cook uncovered,over a low heat until the vegetables are tender.
8)Stir in the lime juice.
Mixed Vegetable Curry is ready to be served.
